This is a southwest-facing vineyard with gentle slopes just adjacent to the winery and close to a water body (backwaters of Mukhne dam). Vallonné receives constant breeze because of the contours and the water body which helps to maintain an excellent meso-climate, especially for Cabernet Sauvignon during the ripening stage. The row orientation is North-South which ensures ample sunlight to attain good phenolic maturity.
Iron-rich soil, pretty light (less fertile) with porous subsoil which provides excellent drainage further facilitated with the gentle slopes.
Sanket Gawand
Iron-rich captive vineyard on slopes and close to a lake offering good natural stress. This is double cordon VSP which receives maximum exposure to the sun to ensure good phenolic ripening. Very light soil with well-drained soil structure imparting natural stress.
Destemming followed by manual berry sorting. Fermented in SS tank followed by MLF in French Oak barrels. Further ageing for 24 months in 60% new French Oak followed by 18 months of bottle ageing.
Malolactic fermentation was completed in French oak barrels
