Vinification
49% Chardonnay, 33% Pinot Noir and 18% Pinot Meunier from the vineyard at Leckford Estate, the Waitrose Farm in Hampshire and crafted at premier English wine estate, Ridgeview. All fruit is handpicked, and then whole bunch pressed. Careful fractioning of the press juice maximises quality. Alcoholic fermentation with yeast specially selected for traditional method winemaking. 100% malolactic was followed by the 2nd fermentation in bottle. Matured on lees for 42 months before disgorgement. Fined with pea protein and bentonite. Winemakers Simon Roberts and team. Alc 12%, RS 8.3.
