No chemical treatments are used, instead natural treatments (plant-based infusions like nettle, cinammon or whey) are used to enrich the soil. Similarly, the insect population is encouraged to fight diseases or pests in the vineyards and special pollination gardens have been developed for this purpose.
Alcoholic fermentation in stainless steel tanks with natural, spontaneous yeast. Controlled temperatures of 18 - 22 degrees. Tanks are different capacities allowing seperation of different parcels, vineyard sections depending on location of vines and soil type. Wine stays on its lees for a short period. Clarification is done with bentonite and stabilization by chilling to low temperature. Filtration with natural cellulose.
No oak influence but left on its fine lees for 6 months
