50% whole cluster on the Syrah and Tinta Barocca. Rest destemmed and crushed. Fermentation was indigenous yeasts. Pigeage was once or twice per day. Total maceration was from 4 to 6 weeks. Malolactic fermentation and 11 months maturation in neutral 225L, 500L and 5000L vats.
