We follow reasoned farming practices, including the use of using cover crops, mulch, beneficial insects and home made composts
Vinification
Whole bunch pressed. Oxidative handling of juice. Natural Fermentation. No additives added until post Malo when SO2 was added for the first time.
Maturation
6 months in netral oak. No lees stirring.
