When frost of at least -8 degrees freezes the grapes in autumn or winter, we go out to harvest in the early morning hours and immediately press the still frozen grapes. In this way we gain an extremely concentrated essence drop by drop, while the frozen water remains in the iced bowl. Ice wines have an incomparable aroma fireworks and are also very long-lasting.
