2019 is a great vintage thanks to a warm and sunny summer and late season. Those conditions lasted until October. The grapes were harvested at their best maturity, they were specially flavoured as August experienced pretty cool nights (usually warm), that specific condition gave aromatic skins, a very nice freshness of the fruit and really good balance of acidity and sugar.

The grapes are pressed immediately when they arrive in the winery. No maceration as we want to have a very light pink. A lees settling is done. Then we treat the must like a white wine. Fermentation in stainless steel vats then dry iced and carbon dioxide added to avoid oxidation. The wine is stored in stainless steel vats until bottling in February.
