The grapes are growing on trellises and gobelet in old vineyard. Penedés Region under D.O. CAVA.

Vinification

CRUSHING OF GRAPES, COOLING AND GENTLY PRESSED IN PNEUMATIC PRESSES. THE FLOWER MUST BE SENT TO FERMENTATION TANKS, WHERE IT IS FERMENTED WITH SELECTED YEASTS AT LOW TEMPERATURE . FERMENTATION WITH SELECTED YEASTS AT LOW TEMPERATURE (15-16ºC) AFTER THE FERMENTATION THE WINE IS SEPARATED FROM ITS LEES FORMED AND PROCEEDS TO CLARIFY IT. NO MALOLACTIC FERMENTATION FINING. DIATOMACEOUS EARTH FILTRATION FIRST FERMENTATION IN STAINLESS STEEL TANKS. THE SECOND FERMENTATION TAKES PLACE IN THE BOTTLE, FOLLOWING THE TRADITIONAL METHOD.
