Vinification

Grapes are de-stemmed and crushed before careful maceration, which extracts the required colour, tanning and aromas. Persistent pumping over in stainless steel vats is carried out throughout the fermentation process, until the desired baume is achieved. A natural grape brandy is then added to halt fermentation, resulting in a naturally sweet and high quality wine

The wine is matured in seasoned oak barrels for no less than 7 years
