Long dry summer days and cool autumn nights maximize the accumulation of intense flavors and aromatics. Alongside the winemaking team, the Giesen brothers have created a wine with ripe lime, nettles, quince and grapefruit with a lovely depth of aroma. The palate has a juicy texture with wonderful freshness.

As soon as it arrived in the winery the fruit was de-stemmed and gently pressed. Specially selected yeasts were added to the juice to start fermentation which took approximately three weeks at temperatures from 12 - 16 C
