Vineyard

Integrated agriculture. Garnacha: Old bush vines up to 60 years old Syrah: 5-15 years. Soil in the lower vineyards is alluvial while the higher vineyards and all terraces and slopes are on poor, mineral, stony soil based with some granite, Muschelkalk (limestone), and slate. Viticulture

From the oldest vines garnacha to the most delicate pinots, and from our steepest slopes to our most levelled terraces, our vineyards offer a wide arrange of soils and slopes. Rising up around the village of Capcanes, on steep slopes and terraces, our vines are protected by the mountain range of Llaberia. We work predominantly with our two indigenous varietals Garnacha Negra and Carinena of high altitude and low yielding mostly bush vines. Some of them are up to 110 years old. On mineral stony Slate, Limestone and Clay soils our vines are developing highly concentrated fruit intensity and a unique flavour profile.

Vinification

Whole bunch for 2/3 parts of grenache tank, syrah crushed grapes. No stems used here. Partly aged in barrels. Temperature controlled fermentation (27-29ºC) Both varieties are vinified separately in stainless steel tanks Maceration: 8-14 days, malo-lactic fermentation in tank. Naturally cold stabilized in barrel, light filtration.

Maturation

9 month aged in new up to five years old French and American oak barrels, 228l Light and medium toasted; no racking After blending aged for 3 months in tank before bottling.
