Viticulture

The wine was held cold for four days prior to fermentation; this aided extraction of flavour and enhanced colour stability. Inoculation enabled primary alcoholic fermentation; during this time the fermenting must was hand plunged up to four times daily. Once fermented the Syrah was pressed and then racked off gross lees to a mix of tank and seasoned French oak. The wine underwent 100% malolactic fermentation/ Following ageing on light lees, the wine was fined and balanced and prepared for bottling.
